Raspberry Dark Chocolate Mousse Cake

The cake formerly know as “The BOS” we have revamped this customer favorite by taking out the blackberries and adding more raspberries.
Two layers of a chocolate biscuit (bis quee) brushed with our house made raspberry jam and whole raspberries then layered between a rich chocolate truffle mousse. The cake is then glazed with our chocolate butter ganache and topped with a rose of chocolate on top and shards of chocolate decorated with an edible transfer adorn the sides.

We do not mess around with our chocolate!
