White Chocolate Ginger Mousse Cake

I came up with this cake when I was in Aspen. It was for a Japanese restaurant but it makes the perfect holiday dessert.

Don’t worry it is not ultra sweet, we use Callebaut chocolate!

The cake base is a heady ginger cake layered with a white chocolate mousse studded with crystallized ginger and pink peppercorns. It is then glazed with white chocolate ganache and surrounded with decorative chocolate shards.
