Classic Four Layer Chocolate Beet Cake

We started doing this cake in Aspen 20 some years ago and it hasn’t lost it’s appeal.

I guess you could say it’s relatively “healthy” since we use ground beets in the batter. The beets are undetectable but make the cake incredibly moist and dark. We layer this with our decadent chocolate fudge icing.

Should you decide to add a layer of raspberries in the middle we use our house made raspberry preserves with whole raspberries.
